    Olive Oil Cooking Spray
    1 c. chopped onion, celery, and carrots
    1/2 c. thinly sliced spinach
    1/2 c. thinly sliced red cabbage
    1/2 c. yellow squash (quartered)
    1 clove garlic minced
    1 14.5 oz can crushed tomatoes or tomato sauce
    32 oz. Fat Free Reduced Sodium Chicken Broth
    Dash of fresh ground black pepper
    Fresh or dried parsley, oregano, basil, (or any other seasonings you prefer) to taste


Soup can be stored in 1 cup containers and frozen for a quick lunch or snack. Just pop in the microwave and enjoy!


Spray sauce pan with olive oil and heat on medium heat. Add all veggies and sautee for about 3 - 4 minutes. Add crushed tomatoes, chicken broth, pepper and seasonings. Bring to a boil. Reduce heat and simmer for 25 minutes or until veggies are done to your liking.
