Ingredients

    I'm sure any eggs would be fine. I just so happen to have Giant Eagle brand eggs. (70 Calories each)

    1 Medium banana

Tips

Use any toppings you'd like.
I'm not exactly sure about the serving size but I'm pretty sure that you can have it all if you'd like because it's 1 whole banana


Directions

Crack both eggs in a bowl
Slice banana
Add banana to the bowl with eggs
Mash with a fork (it'll get liquidy)
Fry em up like your normal pancake

    O.K.
    Taste delicious. I've played with a few recipes to try to get a better consistency. Discovered 1/8- 1/4 tsp baking powder added makes more like a pancake and less of a banana omelette. Cook on v. low heat min 2 mins per side (depending on type of frying pan being used) - 7/24/15
