Number of Servings: 12


    2 cups Master Baking Mix (Biscuit MIx)
    .67 cup Sugar

    .5 cup Egg Whites
    1 cup Fat Free Greek Yogurt

    1 cup Blueberries


If using frozen berries, do not thaw before folding in to prevent discolouration of batter. Additional baking time may be needed.

Try adding flavouring such as vanilla or lemon.
Try different fruits and flavouring combinations.


Preheat oven to 350 F.

In large mixing bowl stir together baking mix and sugar.
Stir in egg whites and yogurt just until blended.
Fold in berries.

Fill parchment muffin liners or greased muffin tins three quarters full.

Bake for 20 - 25 minutes until tops are lightly golden and toothpick inserted in centre of muffin comes out clean.

Serving Size: Makes 12 medium sized muffins.
