Ingredients

    Cooking Spray
    5 ounces ground beef, 95% lean
    2 ounces ground turkey
    cup mushrooms, sliced
    cup bell pepper (any color), chopped
    1/3 cup black olives, sliced
    15 ounces tomato sauce
    1 tablespoon sugar
    1 teaspoon Italian seasoning
    5 Pillsbury Grands Homestyle buttermilk biscuits, low-fat
    1/3 cup cheddar cheese, low-fat, shredded
    1/3 cup mozzarella cheese, part-skim milk, shredded

Directions

Preheat oven to 350 degrees.

Spray an 11x7-inch baking dish (or like size casserole) with cooking spray.

Spray a large skillet with cooking spray and brown beef & turkey. Add mushrooms, peppers, onion, and sliced olives. Mix well to combine. Stir in tomato sauce, sugar, and italian seasoning. Remove skillet from heat.

Separate bisquits and cut each one into 6 pieces. Gently stir the bisquit pieces into the meat mixture. Pour mixture into the prepared baking dish. Bake 20 minutes.

Remove the casserole and sprinkle the cheeses evenly over the top. Continue baking until the cheeses melt, about 10 minutes. Place baking dish on a cooling surface and let rest about 5 minutes.

Cut casserole into 6 equal portions and serve immediately.

    This sounds really good. I'll probably change the "topping" a little to match what my family likes on pizza, but it's a great idea. I'll let you know how it turns out. - 5/3/09
