    1/2 lb fresh eggplant, peeled and sliced into 1/2 inch thick rounds
    1/4 c part skim shredded mozzarella
    1/4 c spaghetti sauce
    1 tbsp parmesan cheese
    1 tbsp olive oil


Preheat oven or toaster oven to broil. Brush eggplant slices with olive oil, bake for 3 minutes per side or until surface is browned and eggplant is tender. Top eggplant with spaghetti sauce and cheeses. Bake until cheese is bubbly.

  • This dish was fairly easy to make and tasty too. I added a layer of mushrooms under the eggplant and served it over whole wheat pasta. - 10/8/08
