Ingredients

    5 large, or 1 lb., carrots, cut into 1" pieces
    1 lemon, peeled and sliced
    1 tablespoon olive oil
    salt and pepper

Tips

Salt substitute was used in the sodium calculations.


Directions

Heat oven to 425 degrees. Put carrot pieces and lemon slices in a large bowl. Add the olive oil and salt and pepper to taste, or a salt substitute. Toss. Pour out onto a rimmed baking sheet. Roast, tossing once, for 25 minutes.
