    1 onion, chopped
    1 cup lentils
    3 carrots, chopped
    3-4 cups of vegetable broth
    1 14-oz. can diced tomatoes
    2-3 medium potatoes, chopped, skin on
    1 Tbsp olive oil
    1 tsp salt
    few grinds of pepper
    other seasonings to taste


Saute onion in 1 Tbsp olive oil 5 minutes or until soft in large pot over medium heat. Add salt, pepper and other seasonings if desired. Combine rest of ingredients in pot, lower heat and cover. Simmer for 40 minutes or until lentils are soft.
