Introduction

An easy dish for those night you are pressed for time. An easy dish for those night you are pressed for time.
Number of Servings: 6

Ingredients

    1 medium Spaghetti Squash
    1/3 cup Parmesan Cheese, shredded
    1 lbs. light pork sausage
    1 package (10 oz) Spinach, fresh
    3 tsp Italian Herb Seasoning - McCormick
    1/4 tsp Pepper, black
    1/4 tsp Sea Salt

Directions

1. Cut squash in half, lengthwise. Scrape away seeds and stringy bits from the center with a spoon. Place halves in a microwave-safe baking dish. cover with plastic wrap; fold back at one corner to vent. Cook on High power for 10 minutes or until tender.
2. Pull squash away from skin with a fork; transfer to a mixing bowl. Toss with oil, cheese and seasoning (Italian herbs, sea salt and pepper)
3. Brown sausage in a large non-stick skillet until no longer pink. Add spinach by the handfuls; stir briefly until just wilted, 30 to 60 seconds. Remove from heat
4. Mix together squash mixture, sausage and spinach; put into large casserole dish and serve
