    4 oz Salmon Fillet
    2 Tbsp Blackberry Balsamic Sauce (from Giant)
    1/2 c Pineapple Chunks with Juice
    1 tsp Sesame Oil
    1 tsp Soy Sauce
    1/4 c White Rice
    2 c Fresh Spinach
    1/2 tsp Sesame Seeds (optional)


-Cook Rice according to package
-Season Salmon with Salt, Pepper, Garlic, Ginger
-In a small saute pan combine Sesame Oil, Pineapple Juice, and Blackberry Balsamic sauce, bring to a slight simmer.
-Add Pineapple Chunks and Salmon skin side down, cover and continue to simmer for about 4 minutes.
-Flip Salmon over, cover and cook additional 4 minutes
-In large skillet, spray with non-stick cooking spray, add spinach, season with salt, pepper, garlic
-Plate rice, spinach and place Salmon on top. drizzle sauce over plact, top with pineapple chunks. Garnish with Sesame seeds.
