Number of Servings: 6


    2 cups sourdough starter
    1 egg
    1.5 T salad oil
    1/4 cup buttermilk
    2 T sugar
    1.5 t salt
    1.5 t baking soda
    1/2 cup flour


Combine wet ingredients in a bowl and whisk well. In a separate bowl, combine the dry ingredients. Add the dry ingredients to the liquids all at once. Stir lightly. When the batter starts to foam up an double in volume, stop stirring. Cook on a moderately hot and lightly oiled grill till brown on both sides. Remember sour jacks are thin and chewy, not light and fluffy like buttermilk pancakes. Yields 6 medium size jacks. Recipe by Jedediah's House of Sourdough in Jackson, WY.
