Delicious pancakes that are grain-free, made with banana and shredded coconut. Frying them in coconut oil gives them an added tasty coconut kick while the banana keeps them moist and flavourful. Ingredients

    Egg, fresh, whole, raw, 2 large
    Banana, fresh, mashed, 1 large (8" to 8-7/8" long)
    Shredded coconut, unsweetened, 0.5 cup
    Cinnamon, ground, 1 tsp
    Vanilla Extract, 1 tsp
    Coconut oil, Extra Virgin, 1 tbsp

Tips

Top with fresh fruit, as desired. Syrup is not needed as they are moist and tasty, however feel free if you need your syrup fix.


Directions

Mash banana. Mix all ingredients together. Fry in coconut oil. Top with fresh fruit as desired.
