    6 C strawberries, cleaned and hulled
    4 C lemon juice
    5 C sugar


In a food processor or blender puree strawberries in batches.
Transfer puree to saucepan over med-high heat. DO NOT BOIL. Add lemon juice and sugar and stir to combine
Using a thermometer heat to 190 degrees, stirring occasionally.
Ladle mixture into jars leaving 1/4 inch headspace. Wipe rim, add hot lids, and tighten rings just finger tight. Process in water bath canner at a boil for 15 min.
Makes 6-8 pints or 3 quarts of canned concentrate.

To reconstitute: Mix one part concentrate with one part water, sprite, or ginger ale. Adjust to suit your tastes.

**If you do not want to process in canning jars, you can freeze in 1 or 2 cup portions.
