Ingredients

    1 15oz can of cannellini beans
    8 carrots, peeled and diced
    6-8 stalks of celery, chopped
    3 cloves garlic, minced
    1 bag fresh green beans, chopped
    1 bag kale, washed and roughly chopped
    1 red bell pepper, chopped
    1 tsp dried rosemary
    1 tsp dried thyme
    1 28 oz can crushed tomatoes
    3 small yellow onions diced
    2 small zucchini, diced
    1 32 oz carton of low sodium vegetable broth
    1/2 box of pasta, your choice
    1 1/2 tsp granulated sugar
    2 tbsp olive oil
    1 tbsp lemon juice
    3 cups water

Directions

In a large stockpot, heat olive oil over med-high heat. Add the carroys, celery, and onion and saute until softened, about 5 minutes. Next add the zucchini, green beans, and red pepper and saute for an additional 2 minutes. Add garlic and cook 1 minute longer.

Add the broth, tomatoes, water, dried seasonings, sugar, and salt and pepper to taste. Bring this mixture to a boil then reduce the heat to medium and allow soup to gently boil for about 20 minutes, uncovered.

Add the pasta and cover, cook for an additional 15-20 minutes.

Add the kale, beans, and lemon juice and allow to cook until the kale has wilted, about 5 minutes. Serve immediately and save the rest to reheat and enjoy later! Top with some shredded parmesan cheese if desired!
