    1 tsp olive oil
    .5C yellow peas
    1 Can Garbanzo Beans
    1/2 C (TJ's chopped thick) coconut cream
    1 Can fire roasted tomatoes
    1 small onion, chopped
    1/2 eggplant, cubed
    1C water (more as needed)
    2 C fresh spinach
    fresh ginger 1 Tbs
    fresh garlic, 1-2 cloves
    spices to taste:
    garam masala
    fresh cilantro


I serve this over brown rice with a dollop of greek yogurt, perhaps some chutney, and sprinkle of cilantro


saute onion and eggplant in oil, add spices, add tomatoes
add coconut cream, add washed yellow peas, add garbanzo beans.
When starting to boil dump in crock pot cover and cook on high for 3 hours, stir add more water as needed, cover and cook another two.
Add spinach a few minutes before serving until it wilts in and blends.
