Ingredients

    3 TBS. coconut oil
    2 tsp. cumin seeds
    2 tsp. coriander seeds
    16 oz. fresh kale, chopped
    2.5 medium onions, chopped
    2 jalapeno peppers, minced
    50 grams dried shiitake mushrooms
    450 grams dikon, shredded
    14.5 oz. canned diced tomates
    15 oz tomato sauce

Directions

In large skillet, heat coconut oil.
Add spices and cook until first seed pops.
Add in the onions, jalapenos and mushrooms.
Sautee until onions are translucent.
Add dikon, diced tomatoes and the sauce. Mix well.
Add kale, mix well, lower heat, cover and cook for 45-55 minutes stirring once or twice.

Serving Size: Makes six servings.
