Ingredients

    2 bunches Broccoli (chopped)
    3 small Zucchini
    1 Red Bell Pepper
    1 Green Bell Pepper
    1 Yellow Bell Pepper
    2 Tbsp Olive Oil
    2 Tbsp Grated Parmesean Cheese
    Seasoning

Tips

I added Tastefully Simple Sweet Bell Pepper dip mix and a splash of soy sauce as seasoning.


Directions

Bring 1 inch of water to a boil in a 10 inch pan. Add broccoli and boil for 5 - 7 minutes or until it is crisp-tender. Remove broccoli and set aside. Wipe out pan and heat oil. Add remaining ingredients. Cook for a few minutes then add broccoli back in and cook a little longer.

Serving Size: Makes approx. 8 1-cup servings
