Introduction

Ingredients

    3 c. raw baby spinach
    4 c. romaine lettuce, torn in bite size pieces
    4 c. red leaf lettuce, torn in bite size pieces
    1 c. raw carrots, matchstick or grated
    5 large radishes, sliced
    1 1/2 c. fresh mushrooms, sliced
    1/2 c. sliced English (hothouse) cucumber
    3 oz. cherry tomatoes, quartered

Tips

Salad mixture stores better and keeps in longer in an airtight bowl without the tomatoes, cucumbers and mushrooms added.


Directions

Wash spinach and lettuce and spin or pat dry. Combine carrots and radishes with lettuce and toss well. Place desired amount of lettuce mixture in salad plates and add cucumber, tomato and mushrooms to each individual plate as desired.
