Ingredients

2 salmon fillets (4 oz each)
1 tablespoon olive oil
kosher salt and pepper
1 orange, thinly sliced
1 lemon, thinly sliced
fresh thyme
Tips
Most grocers, like HEB, will have salmon fillets packaged in a serving for 2.
Directions
Heat oven to 450° F.
Line a baking sheet with foil and spray with cooking oil.
Slice lemon and orange and make a bed of slices for each fillet. Drizzle the salmon with the oil and season with ¾ teaspoon salt and ½ teaspoon pepper on each side. Skin side down, lay on beds of citrus and top with more slices of of orange, lemon, and thyme.
Roast until the salmon is cooked throughout, about 10 minutes per inch of thickness.
Using 2 large spatulas, carefully transfer the salmon to a platter and scatter the orange, lemon, and thyme on top of it.
