Ingredients

*Egg white, 2 serving Egg, fresh, 1 large
Cheddar Cheese, .25 cup, shredded
Blue Cheese,1 pinch
Avocados, California (Haas), .25 fruit without skin and seeds
Red Ripe Tomatoes, .5 cup, chopped or sliced Sour cream, fat free, 1 tbsp
*Hormel Bacon Bits, 1 tbsp
*Oscar Mayer Turkey Breast, 2 slice
Directions
chop the turkey and mix it with the sour cream and bacon bits.
Take 3 large eggs and separate the whites from two, - give the yolks to the old dog.
mix the egg and 2 whites together with a bit of water and pour it in a skillet (medium heat-cooking spray)
When the egg starts to get a bottom , add half the cheddar.
(these ingredients should only go on half the egg)
Put avocado slices on the bottom, then tomato slices.
Spoon sour cream/meat mixture evenly over the fruit
Add remaining cheddar and sprinkle blue cheese for flavor zing.
When egg is ready, fold up to omelette form. When everything is melty and finished, slide it onto a plate and enjoy.
Makes 1 serving unless Annie is sitting on my lap, then it serves two.
