    1/3 cup water
    1/2 cup Bisquick
    2 T. margarine
    2 eggs
    1 large apple
    1 large orange
    1/3 (to 1/2) cup sugar
    1/2 tsp cinnamon
    1 tsp cornstarch


Heat oven to 400 deg. Generously grease 10" cast iron skillet. Heat water and margarine to boiling in 1 qt. saucepan. Add baking mix all at once. Stir vigorously over low heat until mixture forms a ball. Remove from heat. Beat in eggs, one at a time; continue beating until smooth. Spread in skillet, do not spread up sides. Bake until puffed and dry in center. 20-25 minutes. Add apple mixture and serve.
While pancake bakes, peel and slice apple. Put in saucepan. Cut orange in half, section 1/2 like grapefruit and add to apple. Squeeze remaining half of orange, add to apple. Add sugar and cinnamon. Cook til apples are soft, about 15 min. Take couple tsp juice and add cornstarch to make past. Return cornstarch to apple mixture, cook til thickened.

Serving Size: 2 servings or 4 servings when accompanying other breakfast items
