Introduction
I read many recipes before coming up with my own, which I believe is unique to any of the rest. Living on L.Michigan, we catch plenty of salmon and lake trout which I smoke while it's fresh and freeze for the rest of the year. I needed a low calorie recipe that didn't involve cream cheese or crackers. Since I more servings out of it than I expected, it is a successful low calorie dish but has alot of salt according to recipe calculator. Ingredients

Saute leeks, peppers, garlic, ginger, in coconut oil (or substitute any oil) until tender and then add the lime, clam juice, chicken stock and two cans diced tomatoes. Transfer at least half to a blender or another container and blend smaller portions if necessary. Add the puree back to the remaining stock. Flake the salmon, removing any pin bones, add to pot and cook until hot then combine the coconut milk and cream and serve.
Tips
I pureed some of the flaked salmon, but would not recommend doing that, puree before adding salmon for easier blender cleanup. I use a big Fry Daddy appliance to saute and slow cook and have less cleanup there too. I thought about throwing in some celery but did not. It would be a good garnish or serve it on the side instead of bread and/or crackers.
