Ingredients

    2 heads cauliflower chopped
    2 medium parsnips, peeled and chopped
    3 cloves garlic
    1 cup mascarpone
    1 stick butter
    4 cups frozen broccolli florets
    1/4 cup grated parmesean Cheese

Directions

Preheat oven to 350 degrees.

Add chopped cauliflower, parsnips and garlic cloves to stock pot and cover with water. Add salt to season the water and bring to a boil. Cook until tender and drain.

Put cauliflower, parsnips and garlic cloves into work bowl of food processor, add butter and mascarpone, process until the consistancy of mashed potatoes. Pour into mixing bowl taste and add salt and pepper if you like. Pour in broccoli and mix together. Pour into casserole dish sprayed with cooking spray. Sprinkle parmesean cheese over the top and bake for 30-45 minutes until bubbly and golden brown.
