    1/4 cup unsweetened vanilla almond milk
    1/2 cup fat free, plain Greek yogurt
    1/2 cup unsweetened applesauce
    1/4 cup natural peanut butter
    1/2 cup Egg Beaters or Egg Whites
    1.75 cups old-fashioned oats
    1/4 whey protein powder
    1/2 cup Xylitol
    1 tsp baking powder
    1/2 tsp baking soda
    1/8 tsp salt
    1/3 cup chopped walnuts
    1/3 cup milk chocolate chips


1. Preheat oven to 350F. Line a 12-count muffin tin with foil or silicone muffin liners, and spray with non-stick cooking spray. (Foil and silicone liners are the best non-stick liners when using oat flour.)

2. Place all of the ingredients except the walnuts and chocolate chips in a blender or food processor and blend/process until oats are ground and a smooth batter forms.

3. Add the chopped walnuts and chocolate chips and mix.

4. Divide batter evenly between muffin tins. Bake for 25 to 30 minutes or until lightly golden on top and a toothpick comes out clean. Store in the refrigerator or freeze and pop in the microwave for 30 to 60 seconds for a healthy and convenient snack.
