    18 eggs
    3/4 c. marble jack shredded cheese
    1 lb. ground turkey (or any meat)
    1 green pepper
    1 red onion


Dice green pepper and onion, combine with 18 eggs in large bowl, add cheese and mix. Brown ground turkey (or choice of meat), let cool for apprx. 5 minutes, then combine with egg mixture. Spray muffin pan and place mixture into muffin slots leaving apprx. 1/4 inch of room for eggs to rise slightly. Bake at 350* for about 15 minutes or until top of muffin begins to brown.
