    20 oz JennieO lean ground turkey
    2 JennieO hot Italian turkey sausages
    1 small zucchini, cut in small dice (about 1 cup)
    1/2 red bell pepper, cut in small dice (about 1/2 cup)
    Salt and black pepper to taste
    2-3 tsp Italian Herb Mix (I use Penzeys)
    1 cup Eggbeaters or Costco Egg Whites


Preheat oven to 400 F.

Remove turkey sausage from casing. Brown it with the lean ground turkey in a non-stick skillet, using a little cooking spray if necessary.

Dice the vegetables or chop them in a food processor.

Mix turkey, veggies, salt, pepper, Italian herb mix, and egg whites together.

Put into a loaf pan. I used a mini-loaf pan and got 6 mini loaves.

Bake at 400 for 45 minutes or until an instant-read thermometer reads at least 165.
