    Olive Oil, 0.25 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    Carrots, raw, 2 cup, strips or slices (remove)
    Zucchini, 2 cup, sliced (remove)
    Spinach, frozen, 1.5 package (10 oz) yields (remove)
    Sweet peppers (bell), 2 cup, sliced (remove)
    Mushrooms, fresh, 2 cup, pieces or slices (remove)
    *Kikkoman Lite Soy Sauce, 1 tbsp (remove)
    *Brown Rice, medium grain, 3.5 cup (remove)


Warm oil. Add onions. Cook until translucent. Add carrots until partially cooked. Add peppers, spinach, mushrooms, zucchini, soy sauce. Let cook until veggies are as you like them. Before removing from heat, add brown rice and tofu, if you'd like. Let cook a bit longer. Makes 8 servings.
