Introduction

Easy one dish meal, complete when served with a salad, or you can add green beans or asparagus to the baking dish.
The original recipe called for lemons, but I prefer limes.

Ingredients

    2 tbsp olive oil
    2 limes - 1 thinly sliced, 1 juiced
    2 cloves of garlic minced
    2 large potatoes - cut into 1/2 inch cubes.
    2 chicken breasts (1 pound)
    pepper to taste


Tips

If you let the potatoes and chicken marinate for a couple of ours, the flavor is much fuller.


Directions

Heat oven to 400. Spray baking dish with a no stick spray. Arrange lime slices in the bottom of the pan.
In a large bowl, combine olive oil, lime juice and pepper. Coat potatoes and chicken. Roast for 45-50 minutes
