Introduction

Basic Irish soda Bread-- just flour, soda, salt, buttermilk. NOTE: If you make the loaf in the traditional round shape, crosswise slices are NOT a uniform size. Ingredients

    4 cups unbleached white flour
    1 tsp. salt
    1 tsp soda
    1.5 cups lowfat buttermilk

Tips

--Optional: lightly butter the top crust to make it less brittle ands easier to slice.
--You could also shape it as a square and bake in a 8 or 9 inch square pan to make the slices more uniform in size.


Directions

Measure 4 cups of flour, and thoroughly stir in the salt and soda. Make a well in the center and add 1 cup of the buttermilk, gradually adding more while stirring until a stiff dough forms and holds together. Turn out onto a floured board and knead until moisture is incorporated evenly and dough feels smooth and not lumpy. Traditionally, it should be shaped into a round loaf and a cross cut in the top with a sharp knife.
Bake the round loaf in an 8 - 9" round cake pan at 375 degrees for 45 - 50 minutes, or until browned and sounds hollow when thumped. Remove from oven and cool on a rack.

Serving Size: 18 3/8 inch slices.
