Ingredients

    1 16 oz can hominy (white or yellow)

    1 sm can black beans

    1 sm onion diced small

    1 tsp fresh garlic

    1 tsp chili powder

    1tsp cumin

    1 C fresh finely shredded cabbage

    1 lg tomato sm diced

    1 lg avocado sliced into thin slices or pureed

    8 oz Monterey Jack Cheese

    Corn tortillas

Directions

Saute' Garlic and onions together. Add hominy and beans and spices. Can add a bit of salt and pepper if needed. Put tortillas in plastic bag or container and cover. Heat in microwave for about 30 secs until very warm. I double up the tortilla but it is up to you. Add mixture and top with cheese and then tomatoes, cabbage and avocado. Warning! These can be addictive. makes 6+ tacos depending on how full you stuff them
