Ingredients

2.25 lbs. 93% lean ground beef
12 oz. Jimmy Dean reduced fat sausage
    1 cup chopped onion
1.5 cups Del Monte ketchup (divided)
    2 Tblspns Dijon mustard
2 cups 2% milk shredded mozerella cheese
    1 cup plain bread crumbs
    2 Tblspns Italian seasoning
    1/4 cup chopped fresh parsley
    4 Tblspns grated parmesan cheese
    2 teaspoons dried oregano
    1/4 teaspoon black pepper
    2 large eggs (lightly beaten)
    4 Tblspns honey

Tips

I like to use a frozen Vidalia onion that I have thawed in microwave just enough to chop easily. This prevents the onion from remaining crunchy.

The recipe serving size is 12 slices (6 per loaf) which is quite hearty and can easily be reduced to a smaller serving if need be. Hope you enjoy!!

Directions

Preheat oven to 375°.

Combine the onion, 1/2 cup ketchup, mustard, mozzarella, bread crumbs, Italian seasoning, parsley, parmesan cheese, oregano, pepper, and eggs in a large bowl. Crumble ground meats over cheese mixture; blend well with hands.

Form into 2 oval loaves and place into a glass 13x9 dish coated with cooking spray. Bake at 375° for 45 minutes. Combine remaining 1 cup of ketchup and honey. Pour evenly on loaves. Continue cooking 15 min. Let meat loaf stand in dish 10 minutes.
