Ingredients

    Quinoa, Traditional, Organic 1 cup dry
    drizzle of EVOO
    2 cups broth (chicken or vegetable)
    Asparagus, fresh, approx. 15 spear, cut in 1" pieces
    Grape Tomatoes (3oz/12 tomatoes)quartered
    Basil, 4 tbsp finely chopped
    *Extra Virgin Olive Oil, 4 tbsp or 1/4 cup
    Garlic, 1 tsp or 1 clove
    Crushed Red Pepper, 0.25 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Chicken Breast (cooked)about 2 cups chopped
    Parmesan Cheese, grated 1/4 cup

Directions

rinse quinoa in fine mesh strainer, pat dry. Drizzle small amount of olive oil in saucepan. Place quinoa in olive oil and slightly toast, or until water evaporates. Pour in 2 cups broth, bring to a boil. Boil for 5 minutes, cover and reduce heat to low, cook for another 15 minutes. Remove from heat for 5 minutes before fluffing with a fork. Add to remaining ingredients, and toss.

Serving Size: makes about 6- 1 cup servings
