Simple Lentil Soup

2 cups vegetable broth, unsalted
1/2 cup lentils, rinsed and sorted
1 Tbsp olive oil
1/8 to 1/4 cup onion, chopped
1 celery stalk, chopped
1/2 cup petite diced tomatoes, with juice
1 bay leaf
Salt and pepper to taste
I use this particular soup as a quick go to meal on nights when I'm tired from work. To keep it fairly low in carbs I use a small quantity of lentils and simple vegetables but it's even better with more lentils and a variety of veggies.
Heat oil in skillet. Add celery and cook, stirring now and then, for a few minutes. Add onion and cook until almost translucent, stirring celery and onion together. Remove from heat and add to lentils, bay leaf, salt and pepper. Stir. Cover and simmer until lentils are soft and flavors melded. Remove bay leaf before serving topped with a bit of cheese, sour cream, and black olives if desired.
