    Cinnamon Filling
    3 TBSP coconut palm sugar
    2 tsp cinnamon
    2 TBSP coconut oil, solid not melted

    Traditional Icing
    1 1/2 c powdered sugar
    3 TBSP vanilla coconut milk creamer


    Yogurt Icing
    6 oz vanilla-flavored Greek style coconut milk yogurt
    1 TBSP vanilla coconut milk creamer

    2 c whole wheat white or gluten-free all-purpose plus 1 tsp xanthan gum (used Bobís Red Mill All-Purpose Gluten Free and 1 tsp Bobís Red Mill Xanthan Gum)
    1 1/2 TBSP baking powder
    1/4 tsp sea salt
    2 eggs, flax eggs or chia eggs
    1 1/2 c unsweetened almond milk


If you are not serving waffles as they come out of the waffle maker put them on a cooling rack, this prevents waffles from getting soggy from moisture when you put them on a plate to sit.


In a plastic bag shake together coconut palm sugar and cinnamon.

Add coconut oil to the bag and knead into cinnamon sugar.

Store bag in the refrigerator until ready to use. (You can also make the mixture in a bowl I just find it easy in a bag and fun for kids to help with that part.)

Make desired icing.
For traditional icing, whisk together powdered sugar and creamer until smooth.

For the yogurt icing, stir creamer into yogurt until smooth.

Preheat waffle maker per instructions. In a large bowl, mix together flour, baking powder and salt.

In another bowl, mix together eggs, milk, and yogurt until smooth. Add the wet ingredients into the dry and stir until just combined.

Pull the cinnamon sugar mixture out of the refrigerator and crumble with your hands into the batter, gently fold the cinnamon sugar into the batter, it will be lumpy, and you want the cinnamon sugar to stay in pieces.

Spray or prepare waffle iron per instructions for your waffle maker. Spoon batter into waffle maker and cook waffles per waffle maker instructions; mine cook for approximately 3 minutes.

Drizzle icing over waffles and enjoy!

    This sounds delicious and I appreciate the gluten=free and dairy free recipe. We have a gluten-free house and my husband is lactose-intolerant so we use the So-Delicious coconut milk products every day. Lucky for me, I don't need to go shopping to make this. - 4/18/14

    For as often as one wants a cinnamon roll...indulge!
    We're only human....too many foreign products...

    whomever wrote this hit it right on the head...enough with all the foreign stuff going into our bodies...come on people reviewing these recipe's...check them before printing them for us...

  • People, what is the whining about? It is sugar, flour, shortening and milk. She has provided non-dairy and gluten free products for people who struggle with these items. I will make it with my organic coconut, soy and wheat products and then I will give you a rating, thanks for posting the recipe! - 5/14/14
