Ingredients

    1 large russet potato (or brand of choice)
    1/2 tablespoon extra virgin olive oil
    1 - 2 tsp Italian seasoning
    1 - 2 tsp cajun spice
    salt and pepper to taste

Directions

Preheat oven to 410 F
1. Wash and cut potato into 1/4 in wide strips. Place in cold water in refrigerator for at least 10 minutes.
2. Drain and dry potatoes with paper towel.
3. Place in large bowl, add spices and mix well. Toss in olive oil to coat.
4. Place on non-stick baking pan, (make sure to leave a space between each fry)
5. Bake for 20-25 minutes, or until done. "Do not turn"
