Number of Servings: 3


    3 bell peppers (any combination of red, yellow, orange, green...I like to use different colors in the same dish)
    3 teaspoons olive oil
    3 teaspoons minced garlic
    3 tablespoons balsamic vinegar
    pinch salt
    pinch cinnamon


- Seed peppers and cut into slices
- In a frying pan, saute pan or wok, heat olive oil over medium high heat
- When hot, add the garlic and saute for 2 minutes
- Add the peppers and balsamic vinegar and turn heat down slightly (still medium high, but closer to medium than high).
- Cook peppers, stirring frequently until they begin to carmelize.
- Add the pinches of salt and cinnamon and turn the heat down to medium.
- Continue to cook, stirring occasionally, until all the liquid is absorbed, usually about 20 minutes. If you need to keep the dish warm until the rest of your meal is cooking, just remove the pan from the heat and cover.

1 pepper = 1 teaspoon olive oil, 1 teaspoon minced garlic and 1 tablespoon balsamic vinegar.

Also, use different colors of peppers...the taste is richer and it looks pretty!
