    2 c 2% milk (can use skim or buttermilk)
    1 c old fashioned rolled oats
    1 1/3 c whole wheat flour
    1 1/3 c all purpose flour
    1/2 c toasted wheat germ or cornmeal (I used cornmeal)
    3 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2 tsp ground cinnamon
    4 large eggs, lightly beaten
    1/2 c packed brown sugar
    2 Tbsp canola oil
    4 tsp vanilla


Mix milk and oats in a medium bowl; let stand for 15 minutes. Whisk whole wheat flour, all purpose flour, wheat germ (or cornmeal), baking powder, baking soda, sat and cinnamon in a bowl. Stir eggs, sugar, oil and vanilla into the oat mixture. Add wet ingredients to dry ingredients; mix until moistened.
