    Mushrooms, fresh, 4 very large
    Spinach, fresh, 1.5 cup
    Cauliflower, raw, 1 cup
    Swiss Cheese, .5 cup, shredded
    Olive Oil, 1 tbsp
    Swiss Cheese, 2 slices
    Bread, whole wheat, 1 slice, torn into small epices
    Garlic cloves 3
    Italian Seasoning


Heat oven to 400 F.

Cut cauliflower in small pieces. Cook cauliflower in boiling water for 2-3 minutes. Tear the leaves off the spinach bunch and wash them. Add spinach and cook for 1-2 more minutes. Drain well when cooked.

Remove the mushrooms stems. Cut off the hardened end and discard. Dice the remaining stems. You could dice an additional mushroom as well if you want. Mince the garlic in a frying pan, sauté the mushrooms and garlic in 1/2 T of olive oil.

Reduce the heat to low. Mix in the cauliflower, spinach, bread pieces, grated cheese, and seasoning to the mushroom pieces. Once the cheese has melted turn off the heat.

Grease a baking dish with 1/2 T of olive oil.

Stuff mixture into mushroom caps. The mixture will be much more than the mushroom can fit. But pack on top and press it to stay together. And put in Place 1/2 slice of cheese over the top of each. When it melts it will help hold the filling.

You may have extra filling depending on the size of mushrooms used.

Bake for about 20 minutes until the mushrooms are cooked though. This veries greatly depending on the size of mushrooms.

I eat 2 as a mail dish and 1 for a side.
