Ingredients

    14 eggs
    0.5 cup of red peppers chopped
    0.5 cup Yellow Pepper strips, or chopped
    1.5 cups of fresh spinach chopped
    1.5 cups of fresh mushrooms chopped
    0.5 cup of shredded cheese
    1 cup frozen broccoli

Tips

Top with Salsa if desired


Directions

Steam the broccoli and chop into small pieces.whisk eggs, add all vegetables. Spoon into lightly greased muffin tins (2/3 full). Bake in oven at 350 for 10-12 mins, or until egg is fully cooked
