Introduction

Quick one skillet dinner. Can be served with rice or pasta of without. Ingredients

    1 1/2-2 lbs. boneless, skinless chicken breasts
    1 can fat free cream of chicken soup
    10-12 baby carrots, sliced crosswise
    1/2 soup can water
    1 tsp Mrs. Dash Original (or to taste)
    1 tsp olive oil
    Additional water if needed

Tips

If using frozen chicken, add to skillet and cover. Cook on medium high and reduce heat to medium after a few minutes


Directions

Heat oil in large non-stick skillet over medium high heat. Add chicken breasts (can cut in smaller 3 oz. pieces if breasts are very large or thick) and brown on each side, about 7 min. Add carrots and continue cooking, about 5 minutes. Add small amounts of water as needed to prevent sticking. Combine seasoning, soup and water and add to skillet, reduce heat to medium, cover and simmer until chicken is done, registering 165 degrees with a meat thermometer.
