Ingredients

    2 Boneless, skinless chicken breasts Cooked and shreaded
    1 12 oz can enchilada sauce
    6 oz fat free or low fat beef gravy
    1 1/4 cup shreaded lowfat colby cheese
    4 Mission tortillas (low carb)

Directions

Separate chicken into 4 servings.
Place 1 serving of chicken on 1 mission tortilla.
Drizzle 1 T. of enchilada sauce and 1 T. of beef gravy over chicken, and add 1/4 c. cheese.
Roll up and place in a 9 x 13 inch baking pan.
Repeat with other 3 tortillas.
Mix remaining sauce and gravy together and pour over the enchiladas. Top with remaining 1/4 c of cheese.
Bake at 375 degrees for 30 minutes.
Makes 4 servings of 1 enchilada each.
