Ingredients
-
1 small head Cauliflower, raw
2 tsp. Olive Oil
1 tbsp. Soy Sauce
8 oz. Chicken Breast, no skin
4 clove Garlic
1/2 cup Onions, chopped
1/2 cup Celery, diced
1/2 cup Carrots, chopped
1 cup Broccoli, chopped or diced
Salt to taste
Black pepper to taste
Tips
-You can use any meat or meat substitute.
-You can use any veggies you want.
Directions
-Grate Cauliflower using food processor, blender, or cheese grater.
-Dice/chop all other ingredients.
-Add oil to frying pan on medium heat.
-Add the onions and garlic to the pan and cook until translucent (about 8 min.).
-Add all ingredients EXCEPT THE CAULIFLOWER, SALT & PEPPER.
-Cook until the chicken is cooked through and the veggies are tender crisp.
-Add cauliflower and stir to combine.
-Cook an additional 3-4 minutes to heat cauliflower.
-Salt & Pepper to taste.
Serving Size: Makes about six one cup servings.
