Ingredients

    1 Pork Loin, Center Cut and trim - 8 oz (about 1 inch thick from Costco
    1/4 cup liquid egg whites
    1/4 cup Almond Flour Meal
    Olive Oil Cooking Spray

Tips

I make one Pork Loin and split it in half. One half for dinner and the second half to put on a Pork and Spinach Salad for lunch the next day.


Directions

Preheat oven to 350 degrees. Place egg whites in shallow dish and place Almond flour in second shallow dish. Dredge Loin in egg whites and then place in almond flour to coat all over. Spray non-stick grill pan with olive oil and sear loin on both sides until brown (about 4 minutes per side - careful not to burn the almond flour). Place in cooking dish and bake in oven for about 20 minutes (depending on the thickness of your P. Loin and your desired doneness
