Ingredients

    2 (1lb.) boneless, skinless chicken breast halves, cut in half lengthwise
    1 egg
    water
    3/4 cup plain bread crumbs
    1 tsp. Italian seasoning (or to taste)
    2 Tbsp. grated fresh Parmesan cheese
    1 jar (24oz.) Great Value Chunky Italian Garden Pasta Sauce
    1/2 cup part skim finely grated mozzarella
    4 cups cooked whole wheat pasta

Tips

If cheese on top of chicken begins to get too brown, tent aluminum foil over top to prevent burning.


Directions

Preheat oven to 400. Cut each chicken breast in half lengthwise so that each piece weighs about 4oz. Pound flat in order to obtain generally same thickness. Beat together egg and water in a bowl. Combine bread crumbs, Parmesan and Italian seasoning on a plate. Dip each chicken piece in egg then in bread crumbs and lay on a baking sheet coated with non-stick spray. Layer 2Tbsp pasta sauce on each chicken piece and add 2Tbsp mozzarella on top of each. Bake for 30 minutes or until meat thermometer registers 170 degrees. While baking, heat remaining jar of pasta sauce in pan on stovetop and cook pasta per package directions, omitting salt. Drain pasta and place 1cup on each of four plates, top with chicken breast and 1/2 cup sauce.
