    Whole Wheat thin pizza crust, pre-made
    8 oz. bag of mini-peppers, chopped
    2 Tablespoons extra-virgin olive oil
    1/2 cup tomato-based pizza sauce
    one portobella mushroom, chopped
    1/4 cup sliced red onion
    1 clove garlic, sliced
    about 1/2 cup baby spinach
    1/2 cup shredded mozzarella cheese
    1 Tablespoon grated Parmesan cheese


Preheat oven to 425 degrees F. Place pizza crust on pan, if using one. Brush crust lightly with a little of the olive oil.

Pour remainder of olive oil into a large skillet and heat over medium heat. Add all vegetables except spinach and stir occasionally until onions and peppers are tender.

While vegetables cook, spread pizza sauce over oiled crust. Top with scant 1/4 cup of mozzarella. Cover with spinach. Spread cooked vegetables over spinach to cover pizza. Top with remaining mozzarella and the Parmesan cheese.

Bake for 8 minutes. Let rest for at least 2 minutes before slicing.
