Ingredients

    2 pounds boneless skinless chicken breast - cooked and cubed
    10 ounce bag of frozen mixed veggies
    1 can Chicken Gravy
    2 cups cauliflower
    half cup non-fat milk
    1 Tbsp Butter
    Salt and Pepper to taste
    1 Cup Sharp Cheddar Cheese
    3 Tbsp Chopped Chives (optional)

Tips

You can use any left over meats in the fridge to make this Sheppard's Pie -- this is great with ground meats too! You can top with your favorite cheese -- pepper jack works well for a little spice.


Directions

In a 9 x 13 inch baking dish, combine chicken, frozen veggies, and gravy. Mix well and spread evenly in baking dish. Using your food processor, blend cooked cauliflower with milk and butter until smooth -- it will resemble mashed potatoes. Season with Salt and Pepper to taste. Spread cauliflower mixture evenly over the chicken and veggies. Top with cheddar cheese and bake for 35-40 minutes at 350 until piping hot and cheese is melted. Garnish with chopped chives.
