Introduction
This recipe was created to use up some left overs I found while re-arranging my fridge. It is inspired by a zucchini patty recipe my sister used to make with Bisquick and cheddar cheese. Ingredients

1 cup zucchini grated
1 garlic clove grated (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & Pepper to taste (about 1/4 tsp each)
2 eggs
1 Tablespoon flour
1 cup cooked quinoa
1/2 cup grated parmesan cheese (green container kind)
Oil for cooking.
Tips
You can't put them on to cook and go off and do something else. You need to keep an eye on them as they cook.
Directions
Take half of a medium sized zucchini and grate it into a medium sized bowl. Grate or crush the garlic if you are adding it. Add rest of the ingredients and mix together with a fork. Meanwhile begin to heat a nonstick skillet and place a tablespoon of oil in it to heat up. Using tablespoon drop a generous heaping spoonfuls of the batter into the heated oil. Make sure to leave a little space between the patties so they can get brown. Each side takes about 2 minutes or so to brown then turn over and brown the other side. When you can see that then patty is cooked through with no visible egg moisture showing they are done. You may need to flip them a couple of times for even cooking.
