Introduction

I invented this recipe for my Grilled Portobello sandwiches, but decided to include the Ailoli recipe as a standalone in case people wanted to use it for other things. Ingredients

    1/2 cup Best Foods/Helman's Light Mayonnaise
    1/2 Tbsp Lemon Juice
    3 cloves garlic, pressed
    7 oz Roasted Red Peppers (2 large peppers)

Directions

Using a food processor, add all ingredients and blend until smooth, scraping down sides as necessary.

Refrigerate for at least half an hour before using to give the flavors a chance to blend.

If you want to roast your own peppers, place oven rack on its highest position, put it on broil and pre-heat for 5 minutes. Place large strips of pepper on a baking sheet skin side up. Broil for 8-10 minutes, turning the sheet half way through. The peppers will char - this is okay. Let the peppers cool and then pull the skin off the peppers.
