    1 Medium/Large Onion
    1 Medium/Large Bell Pepper
    1 Package Upton's Seitan Bacon
    2 Tbs Soy Sauce
    2-4 Cloves of Garlic
    1.5 Tbs Cumin Powder
    1 Tbs Chili Powder
    2 Tsp Paprika
    2 Bay Leaves
    4 Cups Vegetable Broth (I like the Pacific Brand Tortilla Soup Base)
    12 Oz Porter (or Beer of your choice)
    1 Can Kidney Beans
    1 Can Stewed Tomatoes
    Salt and Pepper to Taste


Serve over corn chips (fritos) with Better than Sour Cream vegan substitute and fresh onions! Frito Pie!


Heat Oil in cast iron dutch oven or large skillet and sauté the peppers and onion. Once they brown, add seitan, soy sauce and garlic and allow the ingredients to rest on medium heat. Deglaze the pan with half of the beer, scraping the sticky stuff off the bottom of the pan. Add the rest of the beer, all the spices, tomatoes, beans and broth. Allow everything to simmer for 20-30 minutes (or until it reaches the desired consistency)
