Ingredients

    Carrots chopped 3 c
    Cauliflower florets 3 c
    1+2 T olive oil
    2 T fat free Greek yogurt
    2 t red wine vinegar
    1 clove garlic
    6 c salad greens
    .5 can chickpeas
    .5 can black eyed peas

Directions

Toss carrots and cauliflower w 1 T olive oil on a rimmed baking sheet. Bake at 450 degrees 20 min. Let cool. Mix oil, yogurt, vinegar, and garlic. Toss all together
