    2 ripe bananas, mashed
    1 cup plain oatmeal
    2 egg whites
    1 ts. cinnamon
    1/2 ts. salt
    1 ts. vanilla


These would also be very good with the addition of 1/4 c. crushed walnuts or raisins. Additions would change the nutritional values. I like them sandwiched together with 1 tb. natural peanut butter.


Mix all ingredients together. Using a mechanical ice cream scoop, scoop onto cookie sheet lined with Silpat or parchment paper. Do not press down. Bake at 325 10 min or until beginning to lightly brown on the bottom.

Serving Size: Makes 4 servings of 2 cookies.
